On Exchange 2000 you can setup a contact record with [EMAIL PROTECTED] as
the e-mail for that contact and set the user account (properties/Exchange
General/Delivery Options) to foward all incoming e-mail to that contact.
I'm not sure if this possible with Exchange 5.5 or not.

If its for an extended period of time, let the user pop the mail off or
setup OWA to keep it all in house. More functionality that way as well..
