Once you change the schema (even for test) you can not delete these changes! If that's no problem, I would suggest to install E2K on a new computer. It's easier if this new server is a DC but of course you can install it on a member server (more problematic in my opinion). Probably you know that you have 2 options in installation regarding the user you'll use. The user you supply must be a member of schema admins (obviously) + Domain Admins + Enterprise Admins. The other way is a user with Forest-wide right may prepare the schema, domain change for you first ( /ForestPrep and /DomainPrep) and then you can install it using an account which does not have such rights. I think installing the Exchange 2000 on a new computer and then moving mailboxes, replicating public folders etc. is the most convenient way. That's my opinion, people may argue.
