The company outsourced their email to a third party. Cut a long story short
the provider appears to know too much about what's happening inside the
company.

It could be a red herring but..

All access is via OWA and Citrix metaframe and the service (email) is 24*7
so no people don't get locked out when they leave the building as some of
them never go into the building :)

Any other great  ideas are welcome.

Check the event logs on the Exch server. They will post a log everytime
someone opens a mailbox that is not their primary. The only way to remove
the entry is to delete the whole log. So if you find you have no, or very
small logs, that is also a pointer to something going on.

But I would have to ask, how is his supplier getting into his mail system?

I have a user whom believes his email maybe being read by a third party (his
IT supplier) his environment is NT4.0 with Exchange 5.5.

Is it possible to "track" who looks at an email rather than just read/unread
status's?

In the perfect world he's looking to log and review whom opens or reads his
email. They will have admin rights over his mail box.

Any pointers are welcome.
