The core information for OWA, ActiveSync and Outlook Anywhere if you are using that is in the IIS logs. Therefore a decent IIS logging application will be able to generate the reports for you.
Outlook, it depends how they can connect. If you are using Outlook Anywhere, see above. If a VPN is used, then you would have to tie it up with that connection. Another poster mentioned exinsight - that is a dead product, it was patch specific and the developer stopped updating it.
