The term "Client Access server array" or "CAS array" does not apply to OWA. It only applies to RPC / MAPI Access. http://technet.microsoft.com/en-us/library/ee332317.aspx
For OWA, it depends on your Active Directory topology. There a many ways to do this, but the simplest is to create a Network Load Balanced (NLB) array (either hardware of software) for each set of CAS servers in an AD site. For a DR only site, you could create a NLB array ahead of time and simply update your DNS A record (i.e. webmail.company.com) to that IP address as part of your DR procedures.
