You could give the replacement full access to the old employee's mailbox then 
add the mailbox to the replacment's Outlook configuration.  That would allow 
the replacement to copy any needed messages or just leave the old mailbox in 
place where the replacement could simply access the mailbox as needed.

Exchange Experts - We have an employee who has left our organization. We need 
to move the messages that are in her Inbox and Sent Items folders into her 
replacement's mailbox (in a different folder that's named something like 
"So-and-So's Old Messages").

I can think of a couple of ways to accomplish this, but maybe I'm missing 
something simple(r).

What would you say is the easiest way to go about it?
