It's a big question. First, you need to define what mail continuity means to you. And then you can start looking at vendors.
For example, if all you need is MX backup, that's pretty cheap (personally, that's all I use, but there are specific reasons that that is enough for me). For higher levels of access during an outage, you will pay a correspondingly higher amount of money for a solution.
