Check out the VExim project at http://www.silverwraith.com/vexim/ - it's a virtual users/domains implementation based on MySQL and PostgreSQL with a PHP frontend. From memory, there are some instructions in the documentation, failing that, I'm sure it's been mentioned on their mailing list (check the archives).
