If anyone is interested, I tried a few different things, imap to imap copy, 
imap to maildir, pop3 to imap etc. And this program Imapsync worked the best 
for me.

Exim can use either an mbox or maildir style mail spool.  I'm not sure how 
exchange stores its mail, but try looking for something that simply extracts 
the messages into raw MBOX format messages and
copy them to the respective users' mailspool on the unix system.  The only way 
it depends on Exim is how the messages get stored.

As a last resort, you could use fetchmail to connect to the exchange server and 
retrieve messages for each account via imap or pop3, and have fetchmail deliver 
them locally to the unix system.
