This is a general networking problem, not related to Exim at all. Have you set a default gateway in the configuration of these aliased interfaces? It sounds like the network config is such that the last setup device becomes the outgoing device for traffic destined for the default gateway. Make sure the only interface definition with a GATEWAY entry is the primary interface. If you're not sure how to do that, or you're using Network Manager to manage your interfaces, you should probably ask on an Ubuntu support list.
