Rather than build this into Exim4 itself, I do this via an ACL:
acl_check_data:
...
warn
logwrite = msg Subject: $header_Subject:
logwrite = msg To: $recipients
logwrite = return path: $return_path
logwrite = reply addr: $reply_address
