So if you're sending to the new server via SMTP (even localhost:587 or localhost:25) then gecos_name won't have any effect. The impact on remote_transport, where you're changing full.name inside the email address too, suggests to me that this is a "rewrite" found after "begin rewrites", not something impacted by the gecos_name option.
