I don't think there is a guide. How you do this will depend on how complex your 
requirements are. 

If you've just got a bunch of identical users, with mailboxes on the same 
server, and one domain, and no list server, then things are going to be quite 
easy.

Migrating the mailboxes might be a bit trickier: there's a guide at 
http://wiki.dovecot.org/Migration/Courier

We use Cyrus IMAP with LMTP delivery, which allows Cyrus to index mail as it's 
delivered. Exim should be able to deliver direct to maildir mailboxes 
regardless of whether they're for courier or dovecot.

You might find it easier to do the Exim replacement before the IMAP server 
replacement. That way, if you have any problems they'll be easier to diagnose.
