Thanks for the reply - running dpkg-reconfigure exim4-config, the 'mail name' setting was correctly set to the FQDN, however I noticed that it wasn't listed anywhere in update-exim4.conf.conf. Adding the FQDN to 'dc_other_hostnames=''' in update-exim4.conf.conf fixed it all, thanks!
