Sendmail comes to mind here. It's a beast to configure, but it's
pretty stable. You can get configuration information at
http://www.sendmail.org. Also, you will want your client to probe *you* for
mail, not the other way around.

How can I configure my Linux box to act as a fallback host for my client?
Just like what the ISP does. In case my client's SMTP server was down, all
the emails under his domain will fall into my SMTP server.
My brief concept is like:
1. Add the necessary MX record
2. My SMTP server accepts emails from client domain.
3. Periodically probe my client's SMTP server. If it is normal again,
fallback all the emails to its server.
Any steps that I miss, please feel free to comment.
