Can't speak for PCI cards, but I had a ISA parallel port card that
didn't
specifically mention Linux as being supported, but I managed to get it
working with minimal hassle.  The ideal situation is if the card has 
jumpers in it so that you can specify the IO addresses and the IRQ's
that
the extra ports will be using. I don't know if the PCI cards have this
feature, but most ISA cards will (also ISA cards are generally much less
expensive).
