Goto your nearest bookstore and get these books:
1. Essential system Administration - Aeleen Frisch
2. TCP/IP Network Administration - Craig Hunt.

Both these books are from O Reilly Associates and pretty good 
starters into the protocols and essentials of Unix based sysadmin.

You should also take some time to read the RFCs on different 
protocols at http://www.faqs.org.
