Yellow Dog isn't bad. If your used to RedHat-based dists it should be easy to install and work with. SuSE is fine for Macs also but I'm not a big SuSE fan so I can't say I really like it much. Otherwise running Linux on a Mac is no big deal. The main benefit IMO is that they run so quiet.
