Yes, a crossover cable will work as well as a hub.  (There might be some
strange situations where a switch or similar (or "active" hub) works
slightly better just because of the electronic buffering /
amplification, but these are unusual conditions.)

It should not make any difference.  If it does, tell me more, just for
the record.  (Aside, before you buy a hub, consider a switch instead
which has significant advantages over a hub -- 4 port switches are
available in the $49 range (on sale).)

Not positive, but I think:

   * scp is secure cp (copy)
   * sftp is secure ftp (file transfer protocol)
