Just to close the lid on this one, virus scanning is working very nicely
with this setup.  James sent me one which was detected (as requested!)
and I also followed Femme's lead, although not to McAfee.  I found four
variants of a harmless test file, all of which triggered the scanner at:

http://www.eicar.org/anti_virus_test_file.htm

While I have little use for virus detection as there a no W$ clients
doing e-mail on my network, I am tempted to leave it in place anyway as
it automatically warns senders of infected messages.  Anything that
reduces the bandwidth wasted by this crap zooming around the internet
must be a good thing I guess.

Anyway, just to summarize the solution:

Install fetchmail and fetchmailconf
Run fetchmailconf - makes it easy to set things up
Install imap - the pop3 server is set up by default
Install MailScanner and virus checker of choice (Sophos, f-prot)
Point your e-mail client at your server

Done!

Note  this is JUST for inbound mail.  That's all my customer needed, so
I'm keeping it simple.
