I noticed the same behavior here; however, the --del qualifier reset all
runlevels to "off".  Maybe that is what is meant by

"The service is removed from  chkconfig  management, and any symbolic
links in /etc/rc[0-6].d which pertain to it are removed."

Or...since chkconfig amounts to basically a management of symbolic links
in rc[0-6].d, perhaps the existence of the service to chkconfig depends
on the primary script being available in init.d.  In such a case, the
removal of the service from the chkconfig --list would depend on the
relevant script being deleted from /etc/init.d.  That might not be a
desirable situation..
