I'm a CPA in my real life and I decided to go with removable hard drives for our office network.
I just setup a mandrake server and use samba to backup up the NT fileserver right on to the removable hard drive. I have a set of shell scripts that mount the NT fileserver directories and cron runs it everynight at 11pm. It does about 3GBs of data. Then I shutdown and swap hard drive so I have a drive rotated offsite to my house. I usually swap hard drives every few days. I have the mandrake server running headless and use SSH to access it from home or from my windows 2k desktop at work. For a small network like mine it is so easy to setup and run.
