Previous to Crossover 2.0 (which seems to be able to auto-detect my printers) I hard coded my wine to use kprinter as my printing application.
In your wine config file, find where it's specifying LPT1 and have your print command look something like the following: "|kprinter --stdin" This of course assumes you've got your printers set up via something that kprinter knows about (CUPS generally) and you're running KDE. If you're not running KDE, this will still work, but it will take a while for kprinter to start.
