I assume this means I just need to figure out where to put 'sdl-config --cflags' and 'sdl-config --libs' so the compiler gets the flags it needs?

Once you've started a new project, go to the Project Options Menu (either F7 or go to the Proects Menu then Options). Select Linker Options. In the Additional Libraries section add SDL.
