Hello Helen,

The eye movements of the default mesh were created by a 3D artist to 
simulate rotation of the eyes and so there is no exact measure.

One approach to getting a measurement would be to switch to orthographic 
view (in Camera tab), angle the head downward so you can just see the eyes, 
then use a ruler and protractor to measure the angle change on the screen 
after you change the eye direction.
