I met my first live recert yesterday. My neighbor. She has put a lot of
money and time into renovating her house, and doesn't want to leave FF, so
she's hoping to get assigned to working full time in FF, or perhaps
Coralville (near Iowa City). I wonder how many of the 550 are Fairfielders
like that.


----Attached? Wow, I sure am. I realized this morning as my wife was asking me to not take this job in a bad part of town that I was seriously attached to the idea of taking it and was going to go for it, against all odds, but with total faith, as if inspired.  Plus driving to work is going straight East which thanks to Vaj doing my Gorovani I learned is one good thing. If anyone really wants to know why I want this job as jazz club exec chef then I have to say because it makes me smile thinking about it, which is more than I can say for most.  Plus, I want to cook jazzy food. Here's what I made for the tasting:
 
Fire roasted vegetable and creole cream cheese wrap with vodka martini dunk.
Tropical Coffee Laquered Catfish Cappucino.
 
They liked it alot, and it turned out the owner didn't eat any meat so the vegetable thing was cool.  He said the wrap got him buzzed and he didn't even need his martini which he made from the Gray Goose I had left over from the stosh. What a great way to do a tasting, get the people drunk first. I had to make these two courses in 30 minutes or less. I had them done in 15 minutes due to total preparation before time. It was fun. But not as much fun as the checks I'll get.
 
...are you crazy KC? What a re you thinkin coookin in the ghetto, are you fucking outta your mind? why, why, the kitchen sucks, they're gonna lay off your 2nd in charge, your gonna have to wash your own pots at times. yeah, but you get to choose your own product, plan your own menu, command the kitchen (of 3), talk to the clients, butter up your future sponsors amongst the rich ethnic clientelle... 
 
Stop cooking and get double my salary working for Maharishi spreading TM?  OK, I'll take it.
