Robert Marshall, University of Missouri Professor says buy milk 
placed in the dark corners.

Does your milk taste like wet cardboard? Blame the bright lights in 
your market's dairy section. 


Robert Marshall, University of Missouri food science professor said 
milk when exposed to fluorescent light has a bitter taste. If the 
milk is stored within a few inches of fluorescent light in 
translucent shelves, has an oxidized flavor within a few hours and 
distinct off flavor after 12 hours. 


Marshall the closer the milk stays to the lights and longer it stays 
there it creates an off flavor which other experts also call it 
as "burnt" flavor. 


The good news is these lights have little effect on milk's 
nutritional value and is not related to bacteria, however fluorescent 
light inactivates riboflavin (vitamin B2) and ascorbic acid (vitamin 
C). The researchers say Whole milk variety suffers the least compared 
to other low percent and low fat milk varieties. The high level of 
fat present in whole milk blocks out the damaging light wavelengths, 
but other milk varieties will lose its flavor when exposed to 
fluorescent lights. 


Milk in glass and translucent plastic containers are affected quickly 
with fluorescent light, while opaque paper board containers prevents 
this off flavor problems, the best. 


Marshall recommends buying milk from the deepest corners where the 
milk receives less light, but definitely not from the front rows. 


I think the groceries stores and marketplaces should start using LEDs 
which doesn't seem to affect the food and keeps the foods fresh a 
longer time. The LED's doesn't emit ultraviolet or infrared lights 
which are harmful and spoils the foodstuffs. One supermarket place, 
Migros in Switzerland is incorporating this, since the local 
superstores are not doing this, we better take the milk from the back 
rows not the front ones. Or go to the farmer's market and get fresh 
milk.
