I proposed that very thing to two different kitchen directors, David Earl and 
Brad O'Nash and was overruled by both - I don't remember what their thinking 
was.

We usually baked 60 - 80 loaves every other day, and that would last that 
evening for supper, the next morning for breakfast, lunch and be gone by the 
time dinner was over, so no bread the morning of the next bread baking day. 

People complained about no toast, but the amounts and types of bread we made 
and the frequency with which we baked was set by the kitchen director. Desserts 
we made every day, except Sunday when the bakery was closed, or on the days we 
had ice cream from Great Midwestern.

Remind me, were you there 85-87? Did I know you then?

I'm sure most people liked everything the department baked...I know I certainly 
did! Regarding the above, so you only baked one kind of bread daily? An obvious 
solution would be to bake half as much white and half as much dark so you would 
satisfy both contingencies always.
