Because most Americans know shit about nutrition. They'll go buy a 5
pack of ramen on sale for $1 where if they like ramen so much they could
just buy a package of vermicelli for $1 which would go much farther and
is healthier. Plus that's what most Chinese cooks use. What food advice
they get is for people with metabolic syndrome and they may not even
have those problems. Hence they wind up eating too many carbs or at the
other end of the spectrum too much fried foods.
