ImageJ is reputed to be faster than JAI, my experience with it is that it has an easier interface to program.

It is certainly possible to add text to images via ImageJ, you might like to have a look at the work that's been done by Benoit Hediard at:

He's built a cfc interface to ImageJ that's very interesting, if my memory serves me correctly the cfc does text amongst other things.
