I also had one developer mention that CFMX has Verity and a Verity K2 OEM
installed?  I thought it only had one?

Well there are lots of things -- hence the price.  I think at this point 
in time the primary advantage is simply years of improvement.  Verity in 
CFMX is a pretty old beast.

Just a few things I can think of off the top of my head:
  - full java API
  - federated searches
  - search within search
  - automagic categorisation and topic generation
  - topic agents (alert you when something new hits the collection you 
are interested in)
  - thesaurus management tools (you can turn on thesaurus in CFMX but i 
think the licensing is dodgy and I don't know how to update the dictionary)
  - unlimited collection size
