When I click Manage Collections, it goes through and creates collections - I can see them in CFadmin.
I can do a build / update and thast seems to do something.
Unfortunately I believe Verity collection creation is still broken under CF7. If you manually create the collections in the CFADMIN you should find that build and update scripts work.
