Ahh, now I get it.  You want to email the contents of a form to a specified
user in an automated way...

I'd do something like the following:

<cfset usefields = 'name,address,phone,etc'>

<cfmail to=...>
<cfloop list="#usefields#" index="i" >
#i#: #form[i]#
</cfloop>
</cfmail>

That will give you the ability to order your form fields.  There isn't going
to be an easy way to automatically make them match the order of display
because you can't control how the client sends the form post back to the
server.
