I was actually looking at this today, since I usually use AWstats for my
webstats.  I've found a how to on getting it to work with Tomcat, but it
doesn't look simple:

For now, since I'm proxying all requests to Tomcat via nginx
(webserver), I think it should catch all the requests and allow AWstats
to record what went to Tomcat/Fedora.  I'm going to test this out today,
but if you're looking for a simple webstats package checkout:

There's even a better web ui available for it here:
