You may install multiple xslt under your fgsconfigFinal/index/<indexName>/

The default one is normally called foxmlToSolr.xslt and it is configured in 
your index.properties at

fgsindex.defaultUpdateIndexDocXslt = foxmlToSolr

If you install e.g. myFoxmlToSolr.xslt then you can use it by 

?operation=updateIndex&action=fromPid&value=<pid>&indexDocXslt=myFoxmlToSolr

FGS will be informed about modifications, if you have configured that. See the 
documentation page.
