My most likely guess is that the AVOptions are applied much earlier in the process (see around `fftools/cmdutils.c: av_log(NULL, AV_LOG_DEBUG, " matched as AVOption '%s' with "`), before `fftools/ffmpeg_enc.c::enc_open` gets called. This would also explain why input overriding works, as AVFrame information passing is only done for the encoder.
