The link you provided explicitely say the same thing: -ac allows you to set the *number* of output *channels*, and have nothing to do with chosing audio *streams* (or tracks as you put it). So far, the behavior of -ac explained by others and by your link are the same, and match the current behavior of ffplay I'm observing.
