That is not version 7, that is version 4.4.2. The PPA you quoted would
supply version 7.0.1.
(Isn't "jammy-apps-security" the name of the repo which provides the
package? If so, ffmpeg isn't cominf from said PPA.)

for the sake of completeness, the 7: part of the version number in
Ubuntu is the "epoch" number. This is usually given when the versioning
scheme of the packaged software is changed and new versions cannot be
reliably derived from the version number because of that. Apparently
this has happened 7 times for ffmpeg.
