The simplest hat I've ever done needs no pattern - calculate how many stitches are needed to snugly fit the head using k3/p3 ribbing and cast on. Continue in ribbing until the tube will do a double rollover (3 layers around forehead and ears), and cover the head. When long enough, decrease to a point and finish. This won't be terribly original, but the double rollover is a godsend with a nasty wind chill.
