The only time I sewed selvages together was when I wanted to make vadmal
(very heavily fulled cloth), and it was just a small sample.  I've never
had problems with any of my regular cloth, which is fulled very lightly,
just enough to get the gelatine out and relax the yarns thoroughly.

Did you mix yarns in the warp?  That might explain your problem.  If the
center was a different type of fiber from the sides--like 100% wool
instead of a wool/mohair mix, or something of the like--that would
explain the different amount of fulling.  Sewing the selvages together
won't make any difference in that case.

Do share more about your project :)  What colors and fibers did you
chose?  What kind of vest are you planning?  Will you be able to put
pictures up for us to look at?
