Are you referring to the interpolation used to process the Bayer pattern
colors?  Using three sensors per pixel IS inherently better for more
realistic color capture, but it's not really "better" because of any savings
in processing, which are really insignificant, both cost and time wise, to
the overall benefits of the system.

Typically, the interpolation is done in dedicated hardware, not using a
"processor", and is embedded in one of the custom ASICs in the camera.
