I would like to learn more specifically about what difficulties your
students are experiencing. I have recently done a series of composition
workshops with students (aged 12 to 17) here in Budapest at American and
German schools.  All of them use Finale on one platform or the other,
all are self-taught (that is, learning to use the software is not part
of the curriculum), and most are proficient if not virtuosic users of
the software.  In the context of the workshops I found that I had a lot
to offer students regarding notational practice, but was able to learn a
lot from the students about using the software more creatively and
efficiently.
