What you have to do is to save your altered file under something like 
LawrenceDefault.ftm (finale template) and then change the setting for 
what the default template is under Program Options.  OR you can make a 
copy of the MaestroDefault.FTM (or whatever its real name is) and move 
that to a holding-folder and save your altered version under the name 
MaestroDefault.FTM so that it will be used even when you create a new 
file using the Wizard.

But if you save it under a name OTHER than what the program thinks is 
the name of the default file, then it continues to open its assumed 
default file, thus making it seem as if you have lost all your settings.
