What do you mean when you say "change the staff to trumpet?" You don't change the staff to anything using the staff tool, for your playback purposes.
Simply go to the instrument list and change the patch for each staff to the sound you want -- nothing will change about the notation, just the playback sound. If you want separate sounds for each staff you have to change the channel also, so you may have to create new instruments, so you can have trumpet 1 playing pianissimo on channel 1, trumpet 2 playing mf on channel 2, horn playing on channel 3 and trombone playing on channel 4.
