Open the Time Signature dialog box. Click the "Composite" button. In the first box next to Beat Groups, type 3+2 (do *not* type 3 in the first box and 2 in the second). In the first box next to Beat Duration, type 8. Hit OK. The dialog box will now show the correct beaming pattern, but with a time signature of 3+2/8. So click Options, then 'Use a different time signature for display', and set the display time signature to 5/8. If you've already entered a bunch of music that you want rebeamed, just use the Mass Mover tool to select the measures, choose Rebeam to Time Signature from the Mass Mover menu, and use the instructions above to rebeam to the 3+2/8 time signature.
