Under the VIEW menu you can select the possible colored items and select the color for each of a number of items. That's all there is. Whatever color you select for a layer is what all the notation items will show as within that layer. You can print the music with the different item colors if you choose to.
You need to export as a graphic and change the colors in a page layout or graphics program.
