Hi Darcy, Tenor - Baritone - Bass is a very normal way to indicate an even 3-way split of the men's voices. The other alternatives imply an uneven split - fine if that's what you want, but a composer's decision rather than an engraver's, I think.
The alto stuff is probably because in the last performance, they had too many altos and not enough tenors, so they covered it so you could hear the men's parts better. I would think that's something for the conductor to decide, not the engraver. In other words, your first source sounds perfectly fine. I would follow it unless your client has directed you otherwise.
