With the Smart Shape tool selected, go to the Smart Shape menu and select Smart Shape Options. In Fin2003, the top item is a selection box for the various texts, with Set Font in a box beside it. You can set 8va and 8vb separately, though apparently you have to have a font that has "8va" as one character, as you can't enter more than one character.

What you CAN do though, if you need to create an 8va from a non-music font, is to create a Custom Line, which allows any number of characters as starting text. This gets a little complicated, though you should be able to feel your way through it, as I did. You can create as many Custom Lines as you need, though switching between them takes a few too many keystrokes for my speed deemon personality.
