Make sure you wait until the G5 line is upgraded. When they were first introduced last summer, Steve Jobs promised that they'd hit 3 GHz within a year. So there are definitely major updates coming sometime before September 2004, and you wouldn't want to buy one a week before they unveil the newer, faster, cheaper version.
As for which model to get, I would assume that the new "entry level" G5 (which will probably be a single-processor 2 GHz or something like that) would suit you just fine.
