Braces are not characters in a particular font -- they're global to Finale. Select the Staff tool, select the group (i.e., the piano brace), and choose Staff | Edit Group Attributes. You'll see there the different braces which are available.
If you want to redefine the look of the default curly piano brace, look under Document Options | Piano Braces and Brackets.

You can change the "wing" styles in Document Options | Repeats. You can also change there the thicknesses of the lines that make up the barline and the spacing between them. But again, this is not a "symbol" that gets used -- it's just lines.
